    You might know it as the tequila plant, but agave has quite a few other tricks up its sleeve. Agave comes in many varieties, of which blue agave, or Agave tequilana, is the one from which the slammer is distilled. This, and other varieties, can also be cooked and eaten, brewed into a beer-like drink called pulque and made into the popular sweeteners, agave syrup and agave nectar. But perhaps the most impressive thing about agave is the way it photosynthesises. It uses crassulecean acid metabolism or CAM photosynthesis. Unlike regular photosynthesis, CAM plants collect and store CO2 during the cool of the night, but shut the pores in their leaves during daytime to minimise water loss. This makes them extremely drought tolerant – they need only about 25 per cent of the water that your average plant does – and is one reason why many countries are planting more and more agave as the climate warms, as a source of sustenance, a soil improver, and, increasingly, a source of biofuel.
