You might know it as the tequila plant, but agave has quite a few other tricks up its sleeve. Agave comes in many varieties, of which blue agave, or Agave tequilana, is the one from which the slammer is distilled. This, and other varieties, can also be cooked and eaten, brewed into a beer-like drink called pulque and made into the popular sweeteners, agave syrup and agave nectar.
